Fortified wine is wine that has had a spirit, such as brandy added to it. Popular fortified wines include port, sherry, vermouth, Madeira and marsala. The sooner the alcohol is added to the wine during the fermentation process, the sweeter the fortified wine is, while wine which has alcohol added shortly before the end or after the fermentation process produces a much drier fortified wine.
