Pousse-café

Glossary of Terms

A Pousse-café is a type of layered drink which is served as an after dinner drink, after a coffee course. The name literally means coffee pusher and it is made from colourful layers of liqueurs, syrups, spirits and creams served in a stemmed glass. Just like other layered drinks, the heaviest liquid goes first and the lightest is added last to produce as many as 7 multiple layers.
